variations on keywords

Hi seo experts.

Although I think I'm doing okay with learning the ropes, there's a
couple of things which I really can't get my head around. I hope
someone in the know can shed some light on the subject.

If I have a keyword or phrase in a page or pages that is commonly used
as part of a longer word or phrase, which is the best to use?

For example, the key phrase 'web design' is *also* commonly searched as
'web site design' or 'website design'. Also, 'banana' could also be
searched as 'bananas'.

So, as both sets of words or phrases are equally relevant, is it best
to use the shorter versions in titles and headings or longer? Or is it
more complex than that?

Can anyone point me in the right direction, please?
